many years and consider her one of the foremost experts in Food & Beverage
in Canada. She has experience in all aspects of operations from kitchens/preparation,
service, menu engineering, cost controls, to marketing and sales. She is able
to utilize these skills to garner support by all food & beverage management
and line staff for the implementation of her profit improvement programs.
Her Food and Beverage Yield Management programs are effective and do generate
incremental profits! I have contracted for her services since 1994 for both
Coast Hotels (nine hotels with food and beverage revenues of $ 30 million),
and O'Neill Hotels (thirty six hotels with food & beverage revenues of $100
million). The profit improvements were substantial and ranged from 7 to 14%.
She has a teamwork approach which enables her to successfully implement her
programs without the necessity of corporate support.

Just a short note of thanks for your ongoing work on our behalf at Hotel Wyndham
Montreal. Thanks to your efforts, at the mid-point of the year we have accomplished
a turn-around in our Food & Beverage Department's profitability. The turn-around
to date exceeds $400,000.00 and we expect and have forecasted a departmental
profit for the first time in many years. This improvement substantially improves
our asset value, to say nothing of the ongoing in come stream.
This is the third time in as many years that you have been able to substantially impact our F&B departments' structure, product and ultimately, profitability and we appreciate our ongoing professional relationship. Your cool-headed approach to the various problems and challenges you have encountered in these various assignments has been much appreciated by the managers and employers you have worked with.
